Tagen Bamia

  • 2.0 tablespoons butter
  • 1.0 small onion, finely chopped
  • 1.0 clove garlic, finely chopped
  • 1.5 pounds okra, cleaned, blanched
  • 2.0 cups tomato sauce
  • 1.0 bay leaf
  • 1.0 pinch nutmeg
  • 0.5 teaspoon cardamom, ground
  • 2.0 medium tomato, peeled, seeded and cubed
  • 1.0 tablespoon fresh coriander, finely chopped
  • salt, to taste
  • black pepper, freshly ground, to taste

Heat butter in a pot. Saute the onion and garlic quickly in the hot butter. Add the okra, tomato sauce and spices and bring to a boil. Simmer for 15 minutes. Add the tomato cubes and chopped coriander and bring to a boil again. Season to taste.
