0.75 cup honey
0.25 cup apple juice
2.0 tablespoons butter
2.0 crisp red apples, cored and sliced
8.0 frozen waffles, toasted
8.0 thin slices ham
To make the syrup, place 1/2 cup of the honey and the apple juice in a small saucepan over medium heat; heat through. Set aside; keep warm.
Melt butter with remaining honey in a large, nonstick skillet over medium-high heat. Add apples and cook, stirring constantly, until apples are lightly caramelized, crisp-tender and nicely glazed, about 4 minutes.
For each serving, place two waffles on a plate, slightly overlapping. Top each waffle with a slice of ham. Top with 1/4 of the apple mixture and drizzle with 1/4 of the syrup. Serve hot. Serves 4.
