Easy Paella

Note: For extra-spicy paella, add ground red pepper or hot pepper sauce to taste.

  • 1.0 6-ounce package rice pilaf mix
  • 3.0 tablespoons butter
  • 1.0 teaspoon Cajun spice
  • 1.0 teaspoon fresh garlic, finely chopped
  • 0.5 pound boneless chicken breast tenders, skinless
  • 1.0 medium onion, cut into eighths
  • 1.0 9-ounce package peas, frozen
  • 0.5 pound medium shrimp, cooked

Cook rice mix according to package directions.

Meanwhile, in a 12-inch skillet, melt butter until sizzling. Stir in seasoning and garlic. Add chicken and onion. Cook 7 to 9 minutes over medium-high heat, stirring occasionally, until chicken is no longer pink.

Add peas, shrimp and cooked rice mix. Continue cooking, stirring occasionally, until peas and shrimp are heated through, 4 to 5 minutes. Serves 5.
