Note: For extra-spicy paella, add ground red pepper or hot pepper sauce to taste.
1.0 6-ounce package rice pilaf mix
3.0 tablespoons butter
1.0 teaspoon Cajun spice
1.0 teaspoon fresh garlic, finely chopped
0.5 pound boneless chicken breast tenders, skinless
1.0 medium onion, cut into eighths
1.0 9-ounce package peas, frozen
0.5 pound medium shrimp, cooked
Cook rice mix according to package directions.
Meanwhile, in a 12-inch skillet, melt butter until sizzling. Stir in seasoning and garlic. Add chicken and onion. Cook 7 to 9 minutes over medium-high heat, stirring occasionally, until chicken is no longer pink.
Add peas, shrimp and cooked rice mix. Continue cooking, stirring occasionally, until peas and shrimp are heated through, 4 to 5 minutes. Serves 5.
