1.0 cup dried tomato halves, snipped in half
1.25 pounds potatoes, sliced 1/4-inch thick
1.0 tablespoon vegetable oil
12.0 ounces smoked sausage, sliced 1/4-inch thick
0.75 cup green onion, sliced
0.333 cup honey-Dijon barbecue sauce
In a bowl cover tomatoes with hot water; set aside 10 minutes.
Place potatoes in microwave-safe bowl; cover, venting one corner. Cook on high about 8 minutes, just until tender.
Meanwhile, heat oil in large nonstick skillet. Add sausage; cook and toss over medium-high heat 5 minutes. Add potatoes; cook and toss 5 minutes. Drain and add tomatoes, then onions and barbecue sauce. Cook and toss 2 to 3 minutes until heated through. Serves 4.
